Nutella Pumpkin Cupcakes

So lately my blog has taken a delicious turn into pumpkin land. As I giddily skip into its yummy paradise I’ve left my sad little husband behind. You see, my husband HATES pumpkin flavored anything. When Monday rolls around and he eagerly asks what I’m making for the blog (Monday is my bake like crazy, non-stop oven burning, chocolate melting, caramel drizzling day) and I reply,

“…something pumpkin.”

I can actually see the happiness leave his eyes.

But don’t feel sorry for him yet. I always make it up to him and make something he really likes. Like these. Oh, and these. But let’s get back to what I imagine is served at every corner patisserie in pumpkin land…Nutella Pumpkin Cupcakes. I used my favorite pumpkin cupcake recipe which always comes out perfectly moist and fluffy, and topped them with two types of amazing buttercream because well, I couldn’t decide which one! I think that’s why I love making cupcakes. It’s my outlet to go wild.

Baklava Cupcakes

Delicate honey cupcakes topped with cinnamon mascarpone whipped frosting, sprinkled with chopped pistachios and drizzled with honey syrup. A miniature slice of homemade sweet baklava top these Baklava Cupcakes.

O.M.G. I know that phrase is wildly overused, but O.M.G.

On Monday I slaved away in the kitchen making Apple Cinnamon Baklava. Just kidding…It was so much easier than I expected and the final result was out of this world. Picture if Christmas morning and Miss Baklava hooked up and had a baby. Not out of wedlock of course. Miss Baklava is a very traditional kind of lady. That’s what my Apple Cinnamon Baklava tasted like. Lovliness. These Baklava Cupcakes are a special kind of lovely.

As it baked in the oven, I had a vision of these cupcakes. Fluffy mascarpone delicately sitting on a light, not overly sweet honey cupcake and a gorgeous piece of baklava perched on top. With a lot of hand slapping, I managed to save some Baklava on the side specifically for these Baklava Cupcakes.

Pecan Pie Pumpkin Cupcakes

The holidays have officially started at our house. Halloween decorations are up already (Oliver calls it his spooky house), I’m baking with nothing but Fall flavors and listening to Ella Fitzgerald’s Swinging Christmas. Yes, I start Christmas music before Halloween. Call me crazy, but I don’t think I will ever tire of it! The rain has been coming in more lately, and thank God, it’s also bringing cooler weather with it. Cooler weather = dipping a few degrees down in temperature. Hey, I’ll take whatever I can get!

One of my all time favorite desserts during this time of year is definitely crunchy, gooey, nutty pecan pie. Specifically chocolate chip pecan pie. It’s my downfall when I’m watching my muffin top. The muffin top usually ends up turning into a bundt top, but let’s not get into that. Enough about me. Let’s get to these Pecan Pie Pumpkin Cupcakes! I took my favorite pumpkin cupcake recipe and after baking, filled them with an easy pecan pie filling. I just baked the pie without the crust. After all, we just need the good stuff.

I’m not gonna lie. I think my husband “put a ring on it” because I can bake an amazing key lime pie. I’m not going to say it’s the only reason he married me, but I’m pretty sure it’s in his top five reasons he loves me. It surely is his weakness. He can’t really handle acidic foods like tomatoes, lemons, and oranges, so you could probably say it’s his Kryptonite. I’ve always loved strawberry combined with lime so this cupcake is the perfect marriage of sour and sweet.

Cannoli Cupcakes With Chocolate Mascarpone

I’ve been on a Dean Martin and Rosemary Clooney binge lately. I’m quite sure it has been my source of inspiration for these beauties. Oh, and the cannoli. Authentic cannolis are amazing. The crunchy buttery shell with the contrast of the sweet, smooth ricotta. You can’t go wrong. If you haven’t had a cannoli guys, you’re missing out. If i’ts a good one, it will change your world. I only say that because sweets are my life.
