It is quite evident that Spring has not officially started in middle Tennessee. Our family woke up to a chilly 27 degrees this morning and realized we needed to drag out our sweaters and coats again. Excited for warmer weather, I had started packing away our winter gear as soon as we we got our first hint of Spring last week. I was duped by “Faux Spring”. Its a cruel joke that our state plays when we transition into a new season. Do you experience faux seasons where you live? If it can’t be Spring yet for this Tennessean I can always dream of Spring with a Healthy Strawberry Pink Drink.
What makes this gorgeous drink healthier than the Starbucks version you ask? It’s made with fresh strawberries sweetened with monk fruit sweetener (or any other sweetener you desire. You could use Truvia or Erythritol!). I opted for a dairy free coconut creamer and whipped topping that makes it super dreamy, and a can of Strawberry Vanilla Olipop soda to give it a delightful fizz. Don’t forget the freeze dried strawberries! They add a sweet tangy surprise. Bonus, you can whip this pink drink up in less than 5 min! This healthier version is perfect if you have a Starbucks Pink Drink obsessed pre-teen and don’t want want to give them a sugar bomb each time you make a Starbucks run. Before I finalized the recipe, I had to make sure it got approval from my pre-teen. A few tweaks later and it totally passed the test!
Healthy Strawberry Pink Drink
Ingredients
- 1 cup Chopped strawberries
- 1 Tbsp Sweetener of choice
- 1 can Prebiotic soda (or any low sugar strawberry soda or seltzer)
- Dairy free creamer (I used coconut)
- Dairy free whipped topping (I used coconut)
- 2 tsp Chopped freeze dried strawberries
Instructions
- Chop the strawberries into small pieces. I made them small enough to pass through my straw. Or you can chop them a little larger and have a yummy spoonful at the end of your drink.
- In a bowl, add sweetener to chopped strawberries and let sit while you work on next steps. You want these babies to get nice and syrupy. You could also put in the fridge for 10 min to get extra juicy
- Take the freeze dried strawberries and put in a zip lock baggie. Pound them until they are powdery and crumbly
- Layer your glass with strawberries and ice
- Pour in your soda
- Then pour desired amount of creamer and mix
- Top with whipped topping and freeze dried strawberries
