German chocolate cupcakes frosted with both chocolate cream cheese and salted caramel buttercream frosting. These Chocolate English Toffee Cupcakes are the ultimate salty and sweet treat.
October has been such a blur. I remember thinking about how little the kids were last Halloween. Last year, Jovi was still a newborn in a stroller while we chased a three year old Oliver around to each house on the street. We had to repeat, “Remember to say Thank you!” after each stop. Tonight though, Mr. four year old Oliver had it down perfectly. “Trick or Treat!” and promptly, “Thank you!” would follow. That’s my little guy.
Although he’s growing so fast, he still does little things that let me know his innocence in still intact. For instance, one afternoon a ridiculously sexualized commercial for a fast food restaurant was on the television. It was a young lady eating a rather large cheeseburger in a super sensual way. There’s my son, Oliver right in front of the T.V. (with his nose two inches from the screen), large eyes and mouth wide open. He turns to my husband right after the commercial, and says, “Daddy…” . I think “Dear God, here it comes…”, but he finishes by saying,
“That’s a big sandwich!”
I just wonder how long that innocence will last.
So I found an awesome recipe for English Toffee from Deliciously Yum, and my heart fluttered at the thought of cupcakes topped with thick bits of toffee. And so, Chocolate English Toffee Cupcakes were born. It was a beautiful day. The star of this cupcake is definitely the home made buttery English toffee. I couldn’t decide on one type of frosting, so what do I always do?
Like a glutton, I selfishly use both. And then drizzle homemade salted caramel all over it. For real though. It’s totally necessary.
- German Chocolate Cupcakes
- 1 cup all-purpose flour
- ½ cup packed light-brown sugar
- 1/3 cup granulated sugar
- 1/3 cup cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1/3 cup vegetable oil
- 1/3 cup cream
- 1 large egg
- 1 tsp vanilla extract
- 1/3 cup brewed coffee
- ¼ cup buttermilk
- Chocolate Cream Cheese Frosting
- 8 ounces cream cheese, room temperature
- 1/4 cup unsalted butter, room temperature
- 3 cups sifted powdered sugar
- 1/2 cup cocoa powder
- Salted Caramel Buttercream Frosting
- 1 cup butter (room temperature)
- 8 ounces cream cheese (room temperature)
- 1/2 cup salted caramel
- 3-4 cups powdered sugar
- Topping
- Bits of your favorite English Toffee (I used this recipe from [url href=”http://deliciouslyyum.com/homemade-english-toffee/” target=”_blank” title=”toffee”]Deliciously Yum[/url])
- Salted Caramel Sauce
- Preheat oven to 350 F and line your cupcake pan.
- In a large bowl whisk together the flour, brown sugar, granulated sugar, cocoa powder, baking powder, baking soda and salt.
- With an electric mixer on low, add in vegetable oil, cream, egg and vanilla extract and mix until fully incorporated.
- Pour in coffee and beat some more.
- Add in buttermilk and mix until just combined.
- Fill your cupcake liners 2/3 full and bake for 16-18 minutes or until an inserted toothpick comes out clean.
- Set aside to cool.
- Beat cream cheese and butter until light and fluffy.
- Slowly mix in powdered sugar one cup at a time.
- Mix in cocoa powder.
- Beat for a few minutes until light.
- Beat cream cheese and butter until light and fluffy.
- Pour in salted caramel and beat until combined.
- Add powdered sugar one cup at a time and beat on high until light and fluffy.

I’m a new baker so when it says add salted caramel, is that a candy that comes together? It sounds stupid but I don’t know what it means when it says mix in salted caramel! Thank you

Caroline, you don’t sound stupid at all! I used a recipe to make the salted caramel off the internet. Here is one to try: http://sallysbakingaddiction.com/homemade-salted-caramel-recipe/ Its pretty easy and so yummy! If you don’t want to make your own caramel, you could use store bought from the jar and mix in some sea salt to give it a little salty kick.
