Even then I liked to stay informed on all things sweet and diabetic coma worthy.  Those things are important!  I just never baked with it until I started this blog.

It has rocked my world.

I’ve been wanting to make something with spiced apple and my beloved cookie butter as soon as I noticed the first signs of Fall.  Now, what’s Florida’s first sign of Fall you wonder?  Why, it’s the Starbucks Pumpkin Spice Latte chalkboard sign Ya’ll!  And yes, said Starbucks chalkboard sign is most likely sweltering in the 85 degree heat.  We don’t get the “changing of the leaves” you lucky lucky northerners you.  If you’re sensing some jealousy in my tone, let’s just switch to a yummy topic.

My Biscoff Apple Spice Cake Cheesecake.

Bisoff Apple Spice Cake Cheesecake with cinnamon whipped cream and chopped walnuts and Biscoff cookies - www.yummycrumble.comThe cake is a scrumptious spiced apple cake with big bits of green apple and a 1/4 cup of Biscoff Cookie Butter blended right into the batter.  It’s insanely perfect.  Perfectly insane.  The cheesecake topping is from Scientifically Sweet and it has the perfect blend of nutmeg and cinnamon.  Then on top is one of my most favorite things ever in the history of all things.  Homemade.  Cinnamon.  Whipped.  Cream.

Biscoff Apple Spice Cake Cheesecake

Serves: 8
Ingredients
  • Apple Spice Cake
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 cup Biscoff Cookie Butter
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 green apple peeled and chopped into 1/4 inch cubes
  • Cheesecake
  • 1 package 8 oz cream cheese, at room temperature
  • 1/4 cup granulated sugar
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/8 tsp nutmeg
  • 1 large egg yolk
  • 1 tsp all-purpose flour
  • Cinnamon Whipped Cream
  • 2 cups regular or heavy whipping cream (cold)
  • 1/2 cup powdered sugar
  • 1 teaspoon cinnamon
Instructions
Apple Spice Cake
  1. Preheat your oven to 350 F and grease a 9 inch spring from pan.
  2. With your electric mixer on medium, with the paddle attachment, beat the butter and sugars until light and fluffy.
  3. Beat in vanilla, then the eggs one at a time.
  4. Beat in the Biscoff cookie butter until smooth.
  5. On low, mix in flour, baking soda, cinnamon, nutmeg, and salt.
  6. Fold in apples and and pour into pan.
Cheesecake
  1. With an electric mixer, beat the cream cheese on medium for a few minutes.
  2. Beat in the sugar and vanilla until smooth and creamy.
  3. Beat in cinnamon and nutmeg.
  4. Next beat in the egg yolk and flour until just combined. Try not to over mix.
  5. Pour cheesecake batter on top of apple spice cake batter and spread evenly.
  6. Put cake in oven and bake for 45-50 minutes or until middle is just set.
  7. Once finished, turn off the oven and open slightly. Keep in oven for about another 45 minutes while oven cools down.
  8. Put in refrigerator overnight.
Cinnamon Whipped Cream
  1. Before whipping the cream, place your large metal bowl and whisk attachment in the freezer for about 5 minutes.
  2. Put all ingredients (cream, sugar and cinnamon) in the bowl and whip until stiff peaks form.
  3. Do not over beat.
  4. Piper over entire cake and garnish with chopped walnuts and Biscoff Cookies.

    I love me some cinnamon whipped cream too! This cake is todiefor. Love the biscoff in the cheesecake and the topping and the whipped cream! And the way you have it decorated is gorgeous. Pinned!

    This is such a refreshing post, to see a spiced apple cheesecake recipe in the midst of all the pumpkin recipes. Although I enjoy pumpkin like everyone else. I cannot wait to test this for my Thanksgiving menu. Enjoy a restful weekend, Kathleen 🙂

    How long does this cake keep with that whipped cream topping on it.

      Jackie,
      Mine kept in the fridge for about 2 days with the whipped cream. It didn’t make it to 3 because we kept eating it! The cookies on top went soft, so I would put those on right before serving.
