So I couldn’t stay away from my love for too long.  I dabbled in some white chocolate (aka naked chocolate) recipes, hit up on some strawberry and raspberry desserts, and dove into lemon paradise, but it’s so nice to come back to my one and only.  All my co-workers know my undying love for chocolate.  Every single day I pack a little zip lock bag full of dark or semi sweet chocolate chips.  You know, in case of an emergency.  I eat some at every meal.  Not lying.

Breakfast, lunch, and dinner baby.

Oh, and second breakfast.  Don’t forget second breakfast.  And Elevenses.

Decadent White Chocolate Raspberry Mousse Cupcakes for your sweetheart!  Luscious raspberry mousse fill these tender white chocolate cupcakes.  Lovingly frosted with a super light and airy vanilla butter cream and topped with tart raspberry icing.

My husband and I have never really been one’s to celebrate Valentine’s Day.  Number one, we have a rambunctious 3 year old and a wee 9 month old.  It’s a little hard to get away for a romantic evening.  Also, its kind of difficult to get in the “mood” when you have dried poop in your hair.  (Not even exaggerating there.  It’s happened to me not once.  Twice.)

Number 2, my birthday falls on the 13th.  My husband totally lucked out on that one.  My birthday kind of cancels out the day devoted to cheap candy and cheesy love cards.  Which is fine with me…I like to celebrate my birth more than Valentine’s Day.  As long as I get a little bit of that cheap candy.

Sticky Turtle Cookie Trifle

If you’re a baker you most likely have a few leftover chocolate chip cookies or cupcakes that never made it to the frosting stage.  Sure, you could just pick at them until they’re gone, bring them to the office for your coworkers to devour, or freeze them for another day.  Instead of gingerly snacking on the rest of the leftovers throughout the week, I decided to stuff my face right now with an incredibly easy and super gooey delicious mash up.  I used some leftovers from my Chocolate Alfajor Cupcakes and some of my Caramel Triple Chocolate Chip Cookies.

Like I said, it was ridiculously easy to throw together.  This would be great if you have guests coming over for dinner and wanted to serve a nice little treat at the end.  It presents itself beautifully and looks like there was quite a bit of effort put into it.  Little do they know, its just some leftover goodies layered with caramel and whipped cream.

“Here madame, is your dessert made of my leftover cookies that were about to expire. Enjoy.”

No one has to know right?

Super chewy Oatmeal Raisin Cookie Sandwiches with Sweet Tea Frosting.  These totally kick Little Debbie in the butt!  

So, I almost had a mini heart attack yesterday.  I’m very new to this whole hosting on the internet thing and blogging.  It’s a scary frontier and I’m always learning something new about it everyday.  Well, I wanted to set up my Google Webmasters account and verify ownership – I’m sure all you bloggers know what I’m talking about.  It’s a cool way to see who links to my blog and see if anyone out in the world is talking about little ol’ me.  As I was going into my hosting account and adding the Google text I accidentally changed the DNS pointer.  Sounds harmless…

Not.

My webpage stopped working.  Anyone who is internet savvy or has been blogging for a while is probably thinking “No big deal.  It’s not broken.  Only put on hiatus for a little bit.”  Well, I thought I LOST everything.  Yes, I’ve only been blogging for a little over a month, but hey, this little yummy blog has become my baby!  So after talking to techs from my hosting company on the phone, they informed me (through crazy technical internet space language) that, “No…You did not lose your measly two months of blog content.  You just have to wait for the site to propagate.”  Whatever the heck that means…

So in conclusion:  Do not get cocky with the interwebs and think you can successfully change a little code and things be okay.

Lesson learned.

Arnold Palmer you wonderful man you.  You created my favorite beverage of all time and I thank you.  So, cheers to you…here is my version of your sweet drink in a little yummy cupcake.  Don’t be fooled though.  This little cupcake has so much tart citrus flavor its like a lemon punched you in the mouth.  And then a sweet little blackberry gave you a kiss to make it feel better.

All silliness aside, this really is a delicious cupcake.

Vegan Chocolate Chip Potato Chip Cookies

Let me introduce you to my favorite vegan chocolate chip cookie.  His name is Chocolate Chip Potato Chip Cookie and he’s vegan.

And so very yummy.

Before I ventured into vegan dessert recipes, being the skeptic that I am, I was pretty sure there was absolutely no way a vegan chocolate chip cookie could compare to the real thing.  This little guy proved me so wrong.  It’s crisp on the outside, nicely chewy in the center, and full of rich caramelized flavor.  Everything you could want in a chocolate chip cookie.

On top of the cookies being so stinkin’ yummy, they are so ridiculously easy to make.  You don’t need a mixer, unless you want to get crazy.  You really only need two bowls and a wooden spoon.  I’ts also my go-to recipe when I’m craving cookies and I have no eggs or no butter.  Gasp!  Isn’t that the absolute worst?  My little heart used to get crushed every time.  But not anymore!
