S’mores Madeleines

smores madeleines dipped in dark chocolate and topped with marshmallowGolden S’mores madeleines baked with graham cracker cookie crumbs right in the batter then dipped in dark chocolate.  Don’t forget the mini marshmallow.  The ultimate camp fire treat, it’s my summer makeover for the classic French cookie.

Look away pastry connoisseurs.  It’s about to get ridiculous.  And yummy.

I know I shouldn’t mess with the madeleine.  I mean, it’s pretty perfect in it’s classic form.  Lightly sweet, spongy, and particularly comforting when it’s still warm from the oven.  I’ve made a few changes before, like these madeleines.  And most recently, these lovelies.  I still stayed true to the genoise batter(folding sifted flour into your egg and sugar mixture, followed by cooled melted butter.  Totally backwards!), because it’s what makes a true madeleine, right?  So don’t fret Frenchies!  I’ts still your lovely little cookie!   Just extra delicious.

Cannoli Cupcakes With Chocolate Mascarpone

Cannoli Cupcakes filled with chocolate chip cannoli filling and topped with chocolate mascarpone frosting and pistachios

The Godfather would be quite pleased with these Cannoli Cupcakes.  Buttery brown sugar cupcakes filled with smooth and creamy chocolate chip ricotta cannoli filling and topped with decadent chocolate mascarpone frosting.

I’ve been on a Dean Martin and Rosemary Clooney binge lately.  I’m quite sure it has been my source of inspiration for these beauties.  Oh, and the cannoli.  Authentic cannolis are amazing.  The crunchy buttery shell with the contrast of the sweet, smooth ricotta.  You can’t go wrong.  If you haven’t had a cannoli guys, you’re missing out.  If i’ts a good one, it will change your world.  I only say that because sweets are my life.

And life is good.

One thing you should know about me is I’m obsessed with the Holidays.  Christmas to be exact.  So although my heart is already longing for cooler weather, pumpkin lattes, and sweet potato pie, I made this vibrant Lemon Raspberry Coffee Cake to embrace summer.  When I envision coffee cake I see lots of cinnamon streusel, walnuts, allspice, and all things wonderful.  Maybe even a little pumpkin for Autumn.

Dark Chocolate Cupcakes With Whipped Chocolate Ganache

Perfectly sinful deep dark chocolate cupcakes with whipped chocolate ganache.  Grab a cup of milk because these are super rich and super chocolaty! 

 So let’s get back to what matters in this world.  Chocolate.  Yes, I know…You’re thinking this is just another recipe for boring chocolate cupcakes.  Let me just say, this is chocolate people!  Chocolate is awesome!

Sorry, this is a sensitive subject for me.  I get a little passionate sometimes.

These are definitely not boring.  They taste like the moist center of a dark chocolate brownie, but ingeniously packed into a little cupcake.  That, ladies and gentlemen is enough to get me giddy and ready to bake!   Chocolate ganache is  whipped into a lovely light frosting to give the perfect amount of sweet and fluffy texture in each bite.  Even though I’m raving about how rich these are, they won’t suffocate your face with chocolate flavor.  You can have one without milk and still breathe.  Although, suffocation by chocolate sounds awesome.  But that’s me.

Vanilla Madeleines Filled With Fresh Raspberry Mousse

Vanilla-Madeleines-With-Raspberry-FillingVanilla Madeleines filled with fresh, tart, raspberry mousse and delicately topped with whipped dark chocolate ganache.  Take these simple french tea cakes to the next level.  I promise you won’t stop eating them!

Simply put, french pastries are awesome.  There are so many different kinds it’s pretty amazing.  You have the Tarte au Citron.  The Chocolate Eclair.  The Macaron (which I have yet to master).  I could go on for probably forever, but at the top of my list of favorites is the simple little delicate cookie daintily named the Madeleine.  Even the name is beautiful.  So beautiful that children are named after this gorgeous little cookie.  Actually, I’m pretty sure Madeleine is derived from Magdalene, but if I was a new mommy again I would name her after a cookie.  No regrets.

Chocolate Chip Cookie Dough Cupcakes.  Rich buttery chocolate chip cookie dough baked right in the center of these little devils.  The perfect indulgence for the girl next door.  Simple, sweet, and a little naughty!

This past month has been a little insane to say the least.  Sick kids, a teething 11 month old,  9 year wedding anniversary, comic book convention, and on top of it all…buying and moving into a new home.  I’ve loved every minute of it.  Except for the sick kids of course!  I can’t tell you how many times I’ve heard, “When are you bringing cupcakes to work again?”

That makes my heart smile.

So to kick off the blog again, I’m showcasing some outrageously addictive Chocolate Chip Cookie Dough Cupcakes.  Talk about sinful.  These little cupcakes look unassuming, even innocent.  Until you take that first bite, and you think to yourself “Holy crap, I’m in trouble.”

The recipe comes from Kevin and Amanda and they post some great photos that show a step by step process.  Pictures make everything easier!
