Blackberry Pie Bars

January 17, 2015

Blackberry Pie Bars with homemade whipped cream and fresh blackberries - www.yummycrumble.comBlackberry Pie Bars layered with buttery shortbread and delicious homemade blackberry jam.  Fresh whipped cream and juicy blackberries dress up these lovely little bars.

Blackberry Pie Bars with homemade whipped cream and fresh blackberries - www.yummycrumble.comMy mind says, “Hey there fatty.  January is not even over and you’re already gorging on something with the word pie in it.”, while my mouth is saying…well it’s saying nothing.  It’s stuffed with these Blackberry Pie Bars!

I have a serious love hate relationship with blackberries.  The seeds.  Oh God, the seeds.  But the juicy bursts of tart juice in every little berry.  That’s why I always come back for more.  It’s like summer comes back just for that moment.

Blackberry Pie Bars with homemade whipped cream and fresh blackberries - www.yummycrumble.comThese Blackberry Pie Bars scream summer!  It’s perfect for those mornings of drudging through knee deep snow to get to your car, only to realize you forgot that dang ice scraper.  So you drudge back to the house but slip on ice, which causes all the icicles off your entire roof to rain down like little frozen daggers.  And then you break a nail.  Is that a winter morning for everyone who lives north of Georgia?  I imagine it is.  But what do I know, I live in Florida where it’s hot as B A double hockey sticks S, nine months out of the year.

Skinny Deep Dish Cookie Pie

January 12, 2015

Skinny Deep Dish Cookie Pie - www.yummycrumble.comThis Skinny Deep Dish Cookie Pie packs tons of flavor, so don’t let the name fool you!  With no flour, no eggs, and no butter you can indulge without all the guilt.  Grab a glass of milk, because it’s super rich!

Deep dish cookie pie is like the mother of all desserts.  Crispy edges, gooey center, and did I mention all the ooey gooey chocolate.  Add ice cream and I’m fully committed to divorce my diet.  Papers signed.  But let’s be real.  Deep dish cookie pies are not going to get me that Victoria’s Secret super model body I’m feverishly working for.  It’s at the top of the list of my New Years resolutions.  Right before tackling our atrociously messy butler’s pantry.  I affectionately call it our “junk” pantry. Not.

Skinny Deep Dish Cookie Pie - www.yummycrumble.comSo in order to achieve that Gisele body this year, and not be saddened every time  I see my favorite sweets, I set out on the search for a Skinny Deep Dish Cookie Pie.  One of my favorite bloggers, Katie from Chocolate Covered Katie, completely masters the art of skinny desserts.  She has some outrageously sinful recipes, but they’re all healthy!  It’s insane what she’s come up with.  This is one of my favorite desserts she’s made.  Don’t be alarmed by the ingredients.  Chick peas? In a cookie?  Yes…Trust me.  I trusted her, and I’m so happy I did!

Magic Cookie Bar Cookies

January 6, 2015

magic cookie bar chocolate chip cookiesMini chewy chocolate chip cookies drizzled with sweetened condensed milk and sprinkled with toasted coconut and extra chocolate chips.  These gooey Magic Cookie Bar Cookies are the perfect way to start the year!

magic cookie bar chocolate chip cookies Well, here we are folks.  It’s halfway into the first week of January.  I’ve been dreading this month.  Not because of  near impossible New Year’s resolutions or being tempted at every turn with sugar.  I’m worried about what I’m going blog about!  In case you haven’t noticed,  my blog is a diabetics nightmare.  Everyone is on a health kick!  I’m feeling like an outsider in this yoga pants wearing, smoothie drinking, meal replacement mentality.  A smoothie as a meal!?  That doesn’t make sense, unless it’s brownie batter.  Everybody is sipping on green smoothies while I’m over here licking raw cookie dough off a wooden spoon like it was my last meal.

But I’m still in yoga pants baby.

Cranberry Bliss Bar Cupcakes

December 23, 2014

cranberry bliss bar cupcakes - www.yummycrumble.comThese whimsical cupcakes have it all!  Chopped white chocolate and tart dried cranberries baked right in the luscious cupcake base, swirled lemon cream cheese frosting, and sparkling cranberries glistening on the top.  It’s my favorite Starbucks holiday treat in a cupcake!

cranberry bliss bar cupcakes - www.yummycrumble.comSo something very strange happened to me while I was doing my last minute grocery shop for Christmas day…

Santa Clause hit on me.

Ok, so not Santa Clause, but a fat (and a little too jolly) 65 year old man with a white beard.  Let’s just say I was very uncomfortable and wanted to duck my head into the neck of my sweater and never return.  Even the check out girl asked “Did that just happen?”  I replied with “Yes, it did.  Do you happen to sell rape whistles next to the gum?”  So now I have proof that at 32 with 2 kids and 10 years of marriage under my belt, I still “got it”.  At least to perverted old men.  Find another chimney Santa!

Eggnog Crack Pie Bars

December 13, 2014

Eggnog Crack Pie Bars - www.yummycrumble.comEveryone’s favorite New York “Crack Pie” baked  with Eggnog to give it a special Holiday twist.  Chewy oatmeal cookie pie crust with a lusciously sweet and chewy filling will put these Eggnog Crack Pie Bars at the top of your wish list!

Eggnog Crack Pie Bars - www.yummycrumble.comSo I’ve never heard of this crazy thing called “Crack Pie” until I started diving deep into the food blogging world.  Momofuku…what?  Well, I don’t care where it came from or how much it is ($44.00 a pie!) because once I read the ingredients, I was already  in a deeply committed relationship with this pie.  Without tasting it, I knew this would be a heart breaker.  But like in a strikingly handsome Marlon Brando kind of way.  Let’s rewind.  I meant to say young Marlon Brando…YOUNG Marlon Brando.  Have you seen him in the Godfather?  Yikes.

Well, since I wouldn’t be going to New York or Toronto anytime soon, I snagged the recipe off of Brown Eyed Baker and made a few changes.  I added eggnog to the filling instead of boring old cream.  It makes it extra naughty.  And instead of baking it as a traditional pie, I just made them into bars for easier cutting and just to shake things up a bit.  Like Marlon. He’s unpredictable you know?
