It helps to gorge on copious amounts of champagne and sweets. Which is why I’m excited to dig into this huge slice of Red Velvet Caramel Slice.

These whimsical cupcakes have it all! Chopped white chocolate and tart dried cranberries baked right in the luscious cupcake base, swirled lemon cream cheese frosting, and sparkling cranberries glistening on the top. It’s my favorite Starbucks holiday treat in a cupcake!
So something very strange happened to me while I was doing my last minute grocery shop for Christmas day…
Santa Clause hit on me.
Ok, so not Santa Clause, but a fat (and a little too jolly) 65 year old man with a white beard. Let’s just say I was very uncomfortable and wanted to duck my head into the neck of my sweater and never return. Even the check out girl asked “Did that just happen?” I replied with “Yes, it did. Do you happen to sell rape whistles next to the gum?” So now I have proof that at 32 with 2 kids and 10 years of marriage under my belt, I still “got it”. At least to perverted old men. Find another chimney Santa!

Chewy White Chocolate Pineapple Coconut Cookie bars topped with crunchy coconut, sliced almonds, and drizzled with melted white chocolate.
I’m still on a pineapple high. From these amazing cupcakes I posted about a couple of days ago. I’m still longing for them as I type. When I sought out to make the Pineapple Dole Whip Cupcakes, I bought A LOT of crushed pineapple. I pretty much cleaned the super market out. I was worried I wouldn’t have enough in case I botched the first round. Oh, but I didn’t. They turned out perfectly delicious. So here I am with leftover cans of crushed pineapple itching to be put into another yummy dessert. I was thinking blondies, (which I still might make with pineapple for another post) but I wanted something chewy and dense. I was also thinking coconut. Coconut needs to be with pineapple. They complete each other. The almonds just weaseled their way in.
The combination was a winner.
They were so delicious I ended up eating some for breakfast. I don’t know if it was the crunchy almonds or coconut, but it tasted perfect with my morning coffee and thus my guilt was gone. The sweet and tart pineapple is baked right into the cookie bar base so you get these bursts of pineapple flavor with each bite. I sprinkled the almonds and coconut on top right before baking. The finished result was a crunchy, golden, buttery top layer.

My husband and I have never really been one’s to celebrate Valentine’s Day. Number one, we have a rambunctious 3 year old and a wee 9 month old. It’s a little hard to get away for a romantic evening. Also, its kind of difficult to get in the “mood” when you have dried poop in your hair. (Not even exaggerating there. It’s happened to me not once. Twice.)
Number 2, my birthday falls on the 13th. My husband totally lucked out on that one. My birthday kind of cancels out the day devoted to cheap candy and cheesy love cards. Which is fine with me…I like to celebrate my birth more than Valentine’s Day. As long as I get a little bit of that cheap candy.

Welcome to Alfajor Cupcakes part deux. A few weeks ago I made Chocolate Alfajor Cupcakes with chocolate cream cheese frosting swirled with dulce de leche. They were, to put it lightly…to die for. So, just to make sure I’m covering all bases, I baked some white chocolate ones. Truth be told, there are some people out there that don’t LIKE chocolate. Craziness. They prefer white, which I affectionately call naked chocolate. Pair naked chocolate with dulce de leche and I’m sold.
I found a recipe for white chocolate cupcakes from The Curvy Carrot, which boasted to give a moist cupcake with ultimate white chocolate flavor. It was exactly what I was looking for. I wanted to make sure when eaten, it was unmistakably a white chocolate cupcake and not vanilla. I crumbled some of my favorite Alfajor cookies (these were dipped in white chocolate) and baked them right in the batter. The Alfajor cookies can be found on Gaucho Direct. Even if you aren’t planning on making these cupcakes, get some Alfajores. You won’t be disappointed. They rock. The frosting is simple and easy, made with tons of dulce de leche. To make a stiffer frosting just add a little more sugar than the recipe calls for. It comes out fluffy and caramely and just plain yummy.
