Now for my new summer favorite. These Sweet Cornbread Triple Berry Shortcakes are the perfect excuse to raid your fridge for berries. The shortcakes are dripping with tons of juicy tart berries but don’t forget the star of this dessert. It’s the moist sweet honey cornbread that will have you coming back for more. I played with the idea of cornbread as strictly a dessert when I made Blueberry Cornbread Cupcakes. They were devoured by everyone within a three foot radius.

I feel the blackberry doesn’t get enough love. If your’e not a fan I suggest you grab a big bowl. Fill it with fresh blackberries. Melt some dark chocolate. Drizzle said chocolate all over the berries. Put the bowl in the freezer for about…ummm…3 minutes. Take that bowl out and put an obscene amount of whipped cream on top. After that first bite I promise you will become a blackberry fiend.

One thing you should know about me is I’m obsessed with the Holidays. Christmas to be exact. So although my heart is already longing for cooler weather, pumpkin lattes, and sweet potato pie, I made this vibrant Lemon Raspberry Coffee Cake to embrace summer. When I envision coffee cake I see lots of cinnamon streusel, walnuts, allspice, and all things wonderful. Maybe even a little pumpkin for Autumn.
If you’re a baker you most likely have a few leftover chocolate chip cookies or cupcakes that never made it to the frosting stage. Sure, you could just pick at them until they’re gone, bring them to the office for your coworkers to devour, or freeze them for another day. Instead of gingerly snacking on the rest of the leftovers throughout the week, I decided to stuff my face right now with an incredibly easy and super gooey delicious mash up. I used some leftovers from my Chocolate Alfajor Cupcakes and some of my Caramel Triple Chocolate Chip Cookies.
Like I said, it was ridiculously easy to throw together. This would be great if you have guests coming over for dinner and wanted to serve a nice little treat at the end. It presents itself beautifully and looks like there was quite a bit of effort put into it. Little do they know, its just some leftover goodies layered with caramel and whipped cream.
