It’s cookie swap time people! I’ve only been to one cookie swap party which was back home in the states. I really wish I had participated in more because now that I’m living overseas in Dubai I haven’t heard of anybody doing that sort of thing. I think they’re too beautiful and fit to be swapping dangerous and decadent cookies between one another. I’ve done a cookie swap through the mail before, so I thought that would work until I remembered it costs about 75.00 to ship a box to the U.A.E. Whoever gets stuck with me would probably sneeze all over my cookies.
I haven’t hit the peppermint craziness yet. I’ve still got apples and pumpkins on the brain. That’s why these Caramel Apple Cookie Sandwiches are perfect for a cookie swap party. There’s always someone in the group that’s a little too stubborn to let go of Fall. So while the tables are full of chocolate peppermint meringue cookies and red and green sugar cookies, these cookie sandwiches will be sure to stick out. Plus, salted caramel. I would be grabbing anything with salted caramel drizzle. I used my Apple Pie Cupcakes as inspiration for these cookie sandwiches.

I’m freaking out right now guys. Its only a couple days until October and I have not been able to get my hands on any canned pumpkin. In the land of Dubai where the rose water is flowing and all the spices known to mankind reside, pumpkin puree is very difficult to come by. Don’t they realize that white girls NEED pumpkin?! They have freaking durian fruit. The fruit that smells like hot week old garbage. But no pumpkin yet. So I’ve been using sweet potato in place of pumpkin until I can find some.

You guys, I’m a little sad. I think it has finally hit me that Dubai will never “feel” like Christmas. If you don’t know, I live and breathe Christmas. Many of my friends and especially my husband know my secret. I break out Ella Fitzgerald’s Swinging Christmas and Dino’s Christmas as soon as July hits. I told you I’m crazy! Well guys, I can say Dubai has finally broken me. It’s September and the sugar plumbs haven’t even crossed my mind. It’s hard to feel cozy about the holidays when the temperatures are steadily hanging in the low 100s. And the sand. It’s everywhere. It’s like living in Tatooine! I think Norman (my kid’s Elf on the Shelf) is probably thinking “Where on Earth have you taken me?!” We are about to have a serious pow wow soon. I need his advice on this one. He is an elf after all.

I’ts official. I’m a soccer mom. I knew this day was coming, but man I didn’t expect it to come so soon. Oliver has practice every Thursday night and a game every Saturday. My little CRV is doomed for piles of dirt and grass. Oh, how I loathe thee. It always looks like I was transporting livestock back there. Yeesh. If I haven’t cleaned after practices and games (especially after the rain) I sometimes just avoid turning and looking at the back seat. Thank God for rear view cameras. I haven’t fully transitioned into super mini van mom yet, but I’m super jealous of the new models with built in mini vacuums. That right there is genius.
So since Autumn has started I must confess that I have totally neglected apples. I dove right off the cliff into pumpkins. Glorious pumpkins. Like with these Pecan Pie Pumpkin Cupcakes. I’ts apple season and I completely overlooked it. So before we head into October I wanted to bake something with delicious, beautiful, sweet apples. A nutty and spiced blondie bar topped with tart baked apples was the perfect choice. Oh, and don’t forget the salted apple cider caramel drizzle. I call this baby, Salted Caramel Apple Cider Blondies.
