It is quite evident that Spring has not officially started in middle Tennessee. Our family woke up to a chilly 27 degrees this morning and realized we needed to drag out our sweaters and coats again. Excited for warmer weather, I had started packing away our winter gear as soon as we we got our first hint of Spring last week. I was duped by “Faux Spring”. Its a cruel joke that our state plays when we transition into a new season. Do you experience faux seasons where you live? If it can’t be Spring yet for this Tennessean I can always dream of Spring with a Healthy Strawberry Pink Drink.

What makes this gorgeous drink healthier than the Starbucks version you ask? It’s made with fresh strawberries sweetened with monk fruit sweetener (or any other sweetener you desire. You could use Truvia or Erythritol!). I opted for a dairy free coconut creamer and whipped topping that makes it super dreamy, and a can of Strawberry Vanilla Olipop soda to give it a delightful fizz. Don’t forget the freeze dried strawberries! They add a sweet tangy surprise. Bonus, you can whip this pink drink up in less than 5 min! This healthier version is perfect if you have a Starbucks Pink Drink obsessed pre-teen and don’t want want to give them a sugar bomb each time you make a Starbucks run. Before I finalized the recipe, I had to make sure it got approval from my pre-teen.  A few tweaks later and it totally passed the test!

Prep Time 10 minutes mins
Servings 2

Ingredients

  • 1 cup Chopped strawberries
  • 1 Tbsp Sweetener of choice
  • 1 can Prebiotic soda (or any low sugar strawberry soda or seltzer)
  • Dairy free creamer (I used coconut)
  • Dairy free whipped topping (I used coconut)
  • 2 tsp Chopped freeze dried strawberries

Instructions

  • Chop the strawberries into small pieces. I made them small enough to pass through my straw. Or you can chop them a little larger and have a yummy spoonful at the end of your drink.
  • In a bowl, add sweetener to chopped strawberries and let sit while you work on next steps. You want these babies to get nice and syrupy. You could also put in the fridge for 10 min to get extra juicy
  • Take the freeze dried strawberries and put in a zip lock baggie. Pound them until they are powdery and crumbly
  • Layer your glass with strawberries and ice
  • Pour in your soda
  • Then pour desired amount of creamer and mix
  • Top with whipped topping and freeze dried strawberries

Chocolate Dipped Key Lime Pie Bars

You can most definitely say that key lime pie is the key to my husband’s soul.  It’s his ultimate weakness.  Every year for his birthday, Christmas, our wedding anniversary, and Father’s Day, his little wish list is simple.  Key Lime Pie.  I have it pretty easy, and it comes with the added bonus of getting some.  If he lets me.

Chocolate Chip Peanut Butter BlondiesSummer has definitely hit full force here in the Middle East.  It’s only June and Dubai has already seen temperatures of 110 F.  It really hasn’t felt too bad, but that’s because I’m hunkering down indoors like someone experiencing a blizzard out in Wyoming.  I’m just on the other side of the spectrum.  It’s not depressing like a cold winter in the north which is nice.  That’s because the dang sun will not go away.  Not a single wisp of cloud in the sky for the entire summer.

I always feel like I’m trying to give up on my first love.  Coffee.  It’s hard guys.  That smell of fresh brewed coffee with my favorite creamer…I’m done.  Even though you mess with my skin and give me the jitters, I just can’t quit you! Whenever I’m on that “down with coffee” kick, I always reach for my second favorite hot drink.  The good ‘ole Earl Grey standby.  With cream of course.  I’ve been trying all sorts of teas lately so I’ve been feeling totally British.

Chocolate Peanut Butter Bundt CakeThis May will mark our family’s one year anniversary of living in Dubai.  I’m shocked at how that creeped up on us.  We absolutely love it here and we won’t be moving back to the States anytime soon, mostly because my husband has at least 5 years of work left!  Dubai is growing like crazy and they’ve been on a theme park craze lately.  (Chris is a project manager for an indoor theme park that’s being built) It’s only one of the may under construction right now.
