Pumpkin Coffee Cake
- 1 box of yellow cake mix
- 1 1/4 cups water
- 1/3 cup vegetable oil
- 3 eggs
- 1 15 oz can of pumpkin
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice or cloves
Pecan Streusal
- 1 cup all purpose flour
- 1 cup light brown sugar
- ½ cup softened butter
- 1 teaspoon cinnamon
- 3/4 cup chopped pecans
- 1/2 dark chocolate chips
Pumpkin Coffee Cake
Preheat your oven to 350 F and prepare a 9 x 13 inch pan by lining with foil or using cooking spray.
In a large bowl, whisk together all the ingredients for the cake and pour into the baking dish.
Pecan Streusal
In a medium bowl mix together the flour, sugar, butter, cinnamon, and pecans until it resembles wet sand.
Sprinkle streusal over the batter and top with chocolate chips. Bake for 40-50 minutes, or until an inserted toothpick comes out clean.
