The bright and sunny flavors of raspberry lemonade baked into tart lemon bars. Let these Raspberry Lemon Bars be your last summer treat you will always remember.
It has been quite an emotional week for me. My little four year old started Kindergarten! I’m excited about all the new things he’s going to learn. The education here in Dubai is so extensive. His school will be teaching him Arabic and French, music lessons, and lots of creative art sessions. I’m a little jealous! I’m also a little bummed. I know that once Kindergarten starts the years will just fly by. Then I will be left with no kids in the house and lots of wrinkles and cellulite. That sounds so depressing!
The only thing that has cheered me up a little is that I can bake these Lemon Raspberry Bars in peace. Usually once Oliver smells even the slightest scent of my baking I start hearing this:
“Are they done yet? Sigh…”
“Can I have another taste? Just a little one again.”
Vanilla bean cupcakes swirled with tart raspberry puree then topped with a luscious rose water infused raspberry frosting, and sprinkled with chopped pistachios. Take your taste buds on an exotic vacation with these Raspberry Rose Water Cupcakes!
Living in Dubai has some perks. For one, I can have anything I want delivered to my house for free or for only 5 dirhams (1.35 USD!). I usually grocery shop online, because they deliver my groceries to my doorstep for free. It’s magical. Oh, and did I mention that the Ikea here will deliver and assemble your furniture too. For free. America needs to take some notes.
One of the things I love about living in Dubai is all the variety of exotic foods and ingredients I have access to. I have found everything from rose and cardamon flavored camel milk to crazy looking Southeast Asian fruits like the Rambutan. Every grocery store also has a nice supply of beautiful orange blossom and rose waters, something I always found a little difficult to get back home. I totally took advantage of the rose water for these Raspberry Rose Water Cupcakes.
Romantic Chocolate Raspberry Champagne Cupcakes for Valentine’s Day! Divine devil’s food cake cupcakes frosted with bright pink raspberry champagne frosting and topped with fresh raspberries and a raspberry champagne glaze.
Let’s talk about romance for a minute. In my tweens, I pictured love to be just like the movies. You know, the romantic comedies where the female lead accidentally runs into the handsome man. She spills her coffee on his shirt while their dogs get tangled in each others leashes. They laugh. He whisks her off to Paris for a shopping spree. Then it’s candles, chocolate, and Barry White 24/7. Oh, and these Chocolate Raspberry Champagne Cupcakes. Definitely these cupcakes. Because these cupcakes have raspberry champagne glaze, and that is totally romance.
Every now and then my husband and I reminisce about how we met. The mysterious band guy messages the silly college girl online. They laugh. He whisks her off to Super Walmart in his big white band van on a grocery spree. Now it’s giggling, chocolate, and Ella Fitzgerald 24/7. Oh, and dirty diapers. But I wouldn’t trade my romantic comedy for anything, because I’m deeply in love with my best friend. Well, maybe nix the dirty diapers. 🙂
Warm up your winter mornings with this tropical inspired Pineapple Coffee Cake with Raspberry Glaze. Moist cake full of pineapple, topped with crunchy cinnamon sugar streusal. A tart fresh raspberry glaze gives it a burst of berry flavor.
I don’t want to jinx things, but Oliver my four year old has been quite well behaved lately. It’s almost suspicious. I’m guessing it has something to do with the “rainbow” chart at his preschool. If you make good decisions (not biting or scratching. What are they, cats?) your name will get moved to the color blue or purple. You don’t want red. Red is bad. If you stay in the “good zone”, at the end of the week you get a treat. Kids have it so good don’t they? At what other time in your life do you get rewarded for not biting someone or using potty words. And they get treats! Treats people. For being good little humans.
Lemon Raspberry Coffee Cake with Sweet Basil Whipped Cream. Brighten your morning with this tart coffee cake bursting with sweet raspberries. The perfect summer treat with your coffee or tea.
One thing you should know about me is I’m obsessed with the Holidays. Christmas to be exact. So although my heart is already longing for cooler weather, pumpkin lattes, and sweet potato pie, I made this vibrant Lemon Raspberry Coffee Cake to embrace summer. When I envision coffee cake I see lots of cinnamon streusel, walnuts, allspice, and all things wonderful. Maybe even a little pumpkin for Autumn.
Vanilla Madeleines filled with fresh, tart, raspberry mousse and delicately topped with whipped dark chocolate ganache. Take these simple french tea cakes to the next level. I promise you won’t stop eating them!
Simply put, french pastries are awesome. There are so many different kinds it’s pretty amazing. You have the Tarte au Citron. The Chocolate Eclair. The Macaron (which I have yet to master). I could go on for probably forever, but at the top of my list of favorites is the simple little delicate cookie daintily named the Madeleine. Even the name is beautiful. So beautiful that children are named after this gorgeous little cookie. Actually, I’m pretty sure Madeleine is derived from Magdalene, but if I was a new mommy again I would name her after a cookie. No regrets.
Decadent White Chocolate Raspberry Mousse Cupcakes for your sweetheart! Luscious raspberry mousse fill these tender white chocolate cupcakes. Lovingly frosted with a super light and airy vanilla butter cream and topped with tart raspberry icing.
My husband and I have never really been one’s to celebrate Valentine’s Day. Number one, we have a rambunctious 3 year old and a wee 9 month old. It’s a little hard to get away for a romantic evening. Also, its kind of difficult to get in the “mood” when you have dried poop in your hair. (Not even exaggerating there. It’s happened to me not once. Twice.)
Number 2, my birthday falls on the 13th. My husband totally lucked out on that one. My birthday kind of cancels out the day devoted to cheap candy and cheesy love cards. Which is fine with me…I like to celebrate my birth more than Valentine’s Day. As long as I get a little bit of that cheap candy.
