Luscious layers of buttery phyllo dough nestled between gorgeous layers of cinnamon pear, pistachios, and pecans. Baklava was never meant to be boring. It was meant to be epic like this Pear and Fig Baklava!
I hope everyone is ready for a fabulous New Year’s Eve! I’m going to live vicariously through all the cool kids tonight. First of all, I’ve never been able to stay up past midnight. Don’t think that’s because I’m a parent, or old, or have two early to bed kids. I’ve been that way since my 20’s. It’s so sad! I blame it on my old soul. Secondly, I do have two little kids who can’t seem to keep it together past 9. In our house 9 P.M. is the witching hour of tantrums, whiny little voices, and utter melt downs. So every New Years Eve it’s hot chocolate, a cozy blanket, and the good old fashioned New Year’s countdown from my quiet little television.
Rich dark chocolate, sea salt, Nutella and pistachios all packed into a flourless perfect little cookie. Don’t let the title fool you. These Gluten Free Chocolate Pistachio Cookies will satisfy everyone’s sweet tooth.
You know that perfect crispy edge to a brownie? And what about the chewy dense center after that first bite? Think of all your favorite parts of a brownie magically squeezed into a gluten free, butter free cookie. Yes, no gluten or butter! Oh, and one more thing. Only one bowl! These are so decadent and so delicious, you wouldn’t even guess that the flour and butter are missing.
Three glorious layers come together for the ultimate cannoli experience. These super easy Chocolate Cannoli Bars are still decadent and plus they look super fancy. This is where you can go crazy with the pistachios. Pistachios = Fancy.
So I think I finally got the kiddos on a schedule. Oliver goes to summer camp every morning from 8 to about 1:30. Super amen to that! Then it’s just Jovi and me for what we call “mommy camp”, which is just Jovi watching people play with Play Doh on Youtube. Is that a thing? There are like hundreds of videos of people making cupcakes with Play Doh, and her little two year old brain is hooked. Then around 11 am I smell something funky, change that diaper and she’s down for a nap. Probably dreaming about Play Doh, I’m sure. So for about an hour and a half it really turns into mommy camp. I catch up on the blog, bake, and just soak in the sounds of nothing. I love it.
Delicate honey cupcakes topped with cinnamon mascarpone whipped frosting, sprinkled with chopped pistachios and drizzled with honey syrup. A miniature slice of homemade sweet baklava top these Baklava Cupcakes.
O.M.G. I know that phrase is wildly overused, but O.M.G.
On Monday I slaved away in the kitchen making Apple Cinnamon Baklava. Just kidding…It was so much easier than I expected and the final result was out of this world. Picture if Christmas morning and Miss Baklava hooked up and had a baby. Not out of wedlock of course. Miss Baklava is a very traditional kind of lady. That’s what my Apple Cinnamon Baklava tasted like. Lovliness. These Baklava Cupcakes are a special kind of lovely.
As it baked in the oven, I had a vision of these cupcakes. Fluffy mascarpone delicately sitting on a light, not overly sweet honey cupcake and a gorgeous piece of baklava perched on top. With a lot of hand slapping, I managed to save some Baklava on the side specifically for these Baklava Cupcakes.
The Godfather would be quite pleased with these Cannoli Cupcakes. Buttery brown sugar cupcakes filled with smooth and creamy chocolate chip ricotta cannoli filling and topped with decadent chocolate mascarpone frosting.
I’ve been on a Dean Martin and Rosemary Clooney binge lately. I’m quite sure it has been my source of inspiration for these beauties. Oh, and the cannoli. Authentic cannolis are amazing. The crunchy buttery shell with the contrast of the sweet, smooth ricotta. You can’t go wrong. If you haven’t had a cannoli guys, you’re missing out. If i’ts a good one, it will change your world. I only say that because sweets are my life.
