Caramel Apple Cookie Sandwiches

Caramel Apple Cookie SandwichesSoft and chewy apple spice oatmeal cookies sandwiched with brown sugar and cinnamon buttercream frosting and drizzled with salted caramel.  Think of the perfect caramel apple pie you can eat with your hands!

It’s cookie swap time people!  I’ve only been to one cookie swap party which was back home in the states.  I really wish I had participated in more because now that I’m living overseas in Dubai I haven’t heard of anybody doing that sort of thing.  I think they’re too beautiful and fit to be swapping dangerous and decadent cookies between one another.  I’ve done a cookie swap through the mail before, so I thought that would work until I remembered it costs about 75.00 to ship a box to the U.A.E.  Whoever gets stuck with me would probably sneeze all over my cookies.

Caramel Apple Cookie SandwichesI haven’t hit the peppermint craziness yet.  I’ve still got apples and pumpkins on the brain. That’s why these Caramel Apple Cookie Sandwiches are perfect for a cookie swap party.  There’s always someone in the group that’s a little too stubborn to let go of Fall.  So while the tables are full of chocolate peppermint meringue cookies and red and green sugar cookies, these cookie sandwiches will be sure to stick out.  Plus, salted caramel.  I would be grabbing anything with salted caramel drizzle.  I used my Apple Pie Cupcakes as inspiration for these cookie sandwiches.

Andes Mint Whoopie Pies

Andes Mint Whoopie PiesThick dark chocolate cakes sandwiched with the creamiest, made from scratch mint frosting ever.  And don’t forget the huge helping of Andes Mints! These Andes Mint Whoopie Pies will help you cool off during the heat wave.

Andes Mint Whoopie PiesI think my sweat glands hit a milestone today.  No lie, I changed my clothes like three times today, like a sweaty man.  I basically was sweating like a man with hyperhidrosis. It broke 50 C today, and in American speak, that’s pretty much 120 F.  My little Chevy rental said so and I’m sticking with it.  Summer is so strange here in Dubai.  The sunshine is so bright and beautiful, but the wind is so intense that there is always this dusty haze around.  It’s so dusty it looks like smog.  We haven’t had a major sandstorm yet, but from what I hear it’s a little scary.  Like Tom Cruise Mission Impossible scary.  On a lighter note, we told my son we were living in Tatooine.  He pretty much feels like a boss.  He can now tell his little friends that in his past life he had an address in Star Wars.

Double Chocolate Chip Cookies with Dulce de Leche Frosting

Double-chocolate-chip-cookies-with-dulce-de-leche-frostingDouble Chocolate Chip Cookies with dulce de leche frosting.  Warm caramel flavor mingles with dense dark chocolate in these delectable cookie sandwiches.

So I couldn’t stay away from my love for too long.  I dabbled in some white chocolate (aka naked chocolate) recipes, hit up on some strawberry and raspberry desserts, and dove into lemon paradise, but it’s so nice to come back to my one and only.  All my co-workers know my undying love for chocolate.  Every single day I pack a little zip lock bag full of dark or semi sweet chocolate chips.  You know, in case of an emergency.  I eat some at every meal.  Not lying.

Breakfast, lunch, and dinner baby.

Oh, and second breakfast.  Don’t forget second breakfast.  And Elevenses.

Oatmeal Raisin Cookie Sandwiches with Sweet Tea Frosting

Super chewy Oatmeal Raisin Cookie Sandwiches with Sweet Tea Frosting.  These totally kick Little Debbie in the butt!

So, I almost had a mini heart attack yesterday.  I’m very new to this whole hosting on the internet thing and blogging.  It’s a scary frontier and I’m always learning something new about it everyday.  Well, I wanted to set up my Google Webmasters account and verify ownership – I’m sure all you bloggers know what I’m talking about.  It’s a cool way to see who links to my blog and see if anyone out in the world is talking about little ol’ me.  As I was going into my hosting account and adding the Google text I accidentally changed the DNS pointer.  Sounds harmless…

Not.

My webpage stopped working.  Anyone who is internet savvy or has been blogging for a while is probably thinking “No big deal.  It’s not broken.  Only put on hiatus for a little bit.”  Well, I thought I LOST everything.  Yes, I’ve only been blogging for a little over a month, but hey, this little yummy blog has become my baby!  So after talking to techs from my hosting company on the phone, they informed me (through crazy technical internet space language) that, “No…You did not lose your measly two months of blog content.  You just have to wait for the site to propagate.”  Whatever the heck that means…

So in conclusion:  Do not get cocky with the interwebs and think you can successfully change a little code and things be okay.

Lesson learned.
