I want to start of this post with a formal apology. Not because I haven’t been posting as much as I want to (heck, I’ve got a life. Well, not really. I have kids…so no life.) I’m apologizing because I’m positive that once you bake these Chocolate Chip Cookie Cheesecake bars you most likely will become a recluse. You won’t want to share these with anyone which is not very nice, and no one’s going to want to hang out with a meanie. So what’s your option? You will probably lock yourself in your home and eat these for the rest of your life. So even though these are one of the most delicious things your will ever eat, I’m super sorry for turning you into a modern day Gollum.
Chewy and outrageously gooey Biscoff Chocolate Chip S’mores Cookies. These cookies are stuffed with marshmallows and littered with plenty of chocolate chips and crushed Biscoff Cookies.
I think I’ve kind of turned into a S’mores snob. I’m not sure if that’s something to brag about, but I’m totally going to own it. Here it goes. I’m going to say it…Biscoff cookies are soooooo much better than graham crackers. Especially when making s’mores. Uh oh, there goes my Nabisco endorsement.

When I first started driving here I literally had to pack extra pants from all the “Omigod, he’s coming into my lane and I have no where to swerve!” moments. Don’t get me started on their roundabouts. Please for the love of God, send some Dutch people over here to teach everyone how a roundabout works!

Now, I know that Caramel Violet Crumble Chocolate Chip Cookies is an obnoxiously long title for a little ‘ole chocolate chip cookie. I get it. You’re probably thinking, “why not paste with Fleur del sel on the end while your’e at it?” Well, smarty pants…it’s already mixed in the salted caramel. 🙂 These cookies are so good they deserve that extra long title. They’re so good that even if I ended up naming them Ebola Cookies, you’d be raving about Ebola Cookies to all your friends and not even care. Too soon? Too soon…
This Skinny Deep Dish Cookie Pie packs tons of flavor, so don’t let the name fool you! With no flour, no eggs, and no butter you can indulge without all the guilt. Grab a glass of milk, because it’s super rich!
Deep dish cookie pie is like the mother of all desserts. Crispy edges, gooey center, and did I mention all the ooey gooey chocolate. Add ice cream and I’m fully committed to divorce my diet. Papers signed. But let’s be real. Deep dish cookie pies are not going to get me that Victoria’s Secret super model body I’m feverishly working for. It’s at the top of the list of my New Years resolutions. Right before tackling our atrociously messy butler’s pantry. I affectionately call it our “junk” pantry. Not.
So in order to achieve that Gisele body this year, and not be saddened every time I see my favorite sweets, I set out on the search for a Skinny Deep Dish Cookie Pie. One of my favorite bloggers, Katie from Chocolate Covered Katie, completely masters the art of skinny desserts. She has some outrageously sinful recipes, but they’re all healthy! It’s insane what she’s come up with. This is one of my favorite desserts she’s made. Don’t be alarmed by the ingredients. Chick peas? In a cookie? Yes…Trust me. I trusted her, and I’m so happy I did!
If you’re a baker you most likely have a few leftover chocolate chip cookies or cupcakes that never made it to the frosting stage. Sure, you could just pick at them until they’re gone, bring them to the office for your coworkers to devour, or freeze them for another day. Instead of gingerly snacking on the rest of the leftovers throughout the week, I decided to stuff my face right now with an incredibly easy and super gooey delicious mash up. I used some leftovers from my Chocolate Alfajor Cupcakes and some of my Caramel Triple Chocolate Chip Cookies.
Like I said, it was ridiculously easy to throw together. This would be great if you have guests coming over for dinner and wanted to serve a nice little treat at the end. It presents itself beautifully and looks like there was quite a bit of effort put into it. Little do they know, its just some leftover goodies layered with caramel and whipped cream.

Let me introduce you to my favorite vegan chocolate chip cookie. His name is Chocolate Chip Potato Chip Cookie and he’s vegan.
And so very yummy.
Before I ventured into vegan dessert recipes, being the skeptic that I am, I was pretty sure there was absolutely no way a vegan chocolate chip cookie could compare to the real thing. This little guy proved me so wrong. It’s crisp on the outside, nicely chewy in the center, and full of rich caramelized flavor. Everything you could want in a chocolate chip cookie.
On top of the cookies being so stinkin’ yummy, they are so ridiculously easy to make. You don’t need a mixer, unless you want to get crazy. You really only need two bowls and a wooden spoon. I’ts also my go-to recipe when I’m craving cookies and I have no eggs or no butter. Gasp! Isn’t that the absolute worst? My little heart used to get crushed every time. But not anymore!
Hands down, my favorite go to sweet is, and always will be the chocolate chip cookie. I cannot resist a fresh from the oven, warm, gooey chocolate chip cookie. It makes my little heart skip a beat. Dramatic? Yes. Do I care? No. So let me show you why chocolate chip cookies are the best thing ever. I love the fact that they are so versatile. Browned butter, dark chocolate, milk chocolate, stuffed with Nutella…I could go on and on. These Caramel Triple Chocolate Chip Cookies have three kinds of chocolate, (because you can never have too much chocolate in a cookie), a caramel drizzle, and a light sprinkle of sea salt. All these things make a super yummy cookie.
